Ramadan recipe: Piri piri chicken wrap pizza

Piri piri chicken wrap pizzas
Prep: 15 minutes
Cook: 25 minutes
Serves: 4
Ingredients
4 flour tortilla wraps
250ml tomato passata
500g chicken breast, thinly sliced
1 tbsp olive oil
5 garlic cloves
2 tbsp piri piri seasoning
2 tsp ground cumin2 tsp paprika
1 tsp cayenne pepper
1 tsp salt
1 tsp honey
400g grated cheddar and mozzarella cheese
½ red onion, thinly sliced
1 red pepper, thinly sliced
Method
1. Marinate the chicken breast with olive oil, crushed garlic, piri piri seasoning, ground cumin, paprika, cayenne pepper, salt and honey. (Set aside for at least an hour.)
2. Heat a pan with cooking oil and fry the chicken for 5-6 minutes until cooked.
3. Preheat the oven to 180°C/350°F/gas mark 4.
4. Place tortillas on a parchment paper-lined baking tray and spread the passata over the top of each one, leaving about 1cm around the edge.
5. Sprinkle half the amount of cheese over the tortillas, then add the cooked chicken, red onion and red pepper.
6. Add the remaining cheese on top and bake for 20-25 minutes, until the cheese is melted.
7. Slice, serve and enjoy.
