Ramadan recipe: beef stir-fry with aromatic rice

For the final instalment of Hyphen’s series of Ramadan recipes, Michelle Lee rounds off the holy month with a succulent beef dish, inspired by her mother’s clay pot chicken rice. Packed with hearty south-east Asian flavours, you can forget about ordering takeaway and prepare this meal at home in less than an hour.

Beef stir-fry with aromatic rice

Prep: 40 minutes
Cook: 15 minutes 
Serves: 2

Ingredients

350g beef steak
1 tsp baking soda
3 tsp soy sauce
1 tsp sesame oil
1 tbsp neutral cooking oil
1 sliced white onion 
4 chopped garlic cloves
3 chopped spring onions
1 tbsp kecap manis/sweet soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce

For the aromatic rice:
2 cups rice
1 tbsp dark soy sauce
1 tbsp light soy sauce 
1 tbsp oyster sauce 
5 ginger slices
2 chopped spring onions
2 whole peeled garlic cloves
1 chicken stock cube

Add fried shallots and black pepper to serve

Thinly slice the beef steak against the grain, then add baking soda, soy sauce and sesame oil. Set aside to marinate for 30 minutes. 2. Wash the rice and add it to a rice cooker or pot with two and a half cups of water. Remove 2 tbsp of water and add in light soy sauce, dark soy sauce, oyster sauce, ginger slices, spring onion, two whole peeled garlic cloves, one chicken stock cube. Bring to a boil, then turn down and simmer until the rice is cooked. 3. Heat a large pan or wok on high heat, then add cooking oil. 4. Add the onion, chopped garlic and spring onions and stir-fry for one minute. 5. Add the marinated beef and fry for one minute. Then add sweet soy sauce, oyster sauce and dark soy sauce. Stir fry for three to four minutes on a very high heat, until just cooked. 6. Method

1. Thinly slice the beef steak against the grain, then add baking soda, soy sauce and sesame oil. Set aside to marinate for 30 minutes.

2. Wash the rice and add it to a rice cooker or pot with two and a half cups of water. Remove 2 tbsp of water and add in light soy sauce, dark soy sauce, oyster sauce, ginger slices, spring onion, two whole peeled garlic cloves, one chicken stock cube. Bring to a boil, then turn down and simmer until the rice is cooked.

3. Heat a large pan or wok on high heat, then add cooking oil.

4. Add the onion, chopped garlic and spring onions and stir-fry for one minute. 

5. Add the marinated beef and fry for one minute. Then add sweet soy sauce, oyster sauce and dark soy sauce. Stir fry for three to four minutes on a very high heat, until just cooked.

6. Dish up the aromatic rice and stir-fried beef, topped with fried shallots and a pinch of black pepper.
